Shared with other regions, the recognition of "Truffle Searching and Digging in Italy" is attributed to a vast complex of knowledge and practices handed down orally for centuries, allowing "truffle hunters" to interpret climatic factors, precipitation, soil characteristics, and the recognition of plant associations: fundamental skills for maintaining ecological balance and plant biodiversity, and for ensuring the seasonal biological regeneration of truffle-producing species.

Truffle Hunters and Their Faithful Companions: A Tradition to Discover

A tradition that today it's possible to experience by booking - in the area encompassing Langhe, Roero, Monferrato Astigiano, and Alessandrino - a "search" alongside a "truffle hunter" and his loyal "tabui" (the dog in Piedmontese dialect), and then entering the world of taste by tasting - in season - the prized black truffle (in summer and autumn), or the white truffle of Alba (from October to early January), king of the table celebrated every year at the International White Truffle Fair of Alba, in the ancient city of a hundred towers and UNESCO Creative City for Gastronomy.
